Grand Enclos du Château de Cérons
Cérons liquoreux
Like its famous cousins from Sauternes and Barsac, Grand Enclos du Château de Cérons liquoreux is a Vin d'Or. It benefits from the magic of the Ciron, a small tributary of the Garonne, which allows the "noble rot" or Botrytis cinerea to develop. For the magic to work, the fungus must take hold when the grapes are ripe (before that, it's a scourge known as grey rot, fatal to the harvest). The grapes are then picked by hand in successive passes, as only those that are ready should be harvested.
With their golden color, their aromas of exotic fruits and apricots, so rich and yet so airy, lively and sappy, bearing witness to unparalleled freshness, and finally combining exquisite finesse and elegance, Cérons liquoreux wines are appreciated by the most demanding connoisseurs. There is no limit to their ageing capacity.
ASSEMBLAGE:
100% Semillon with over 60% of the grapes coming from vines aged 50 years or more.
VINIFICATION AND AGEING:
Fermented in barrels of various ages, it matures there for 18 months.
Cuisine:
Ideal with traditional foie gras or scallops in lemon sauce as a starter, then the classic duck à l'orange but also a simple roast chicken on a spit. With 20 years of bottle age, its sweetness is ennobled by a thousand complexities, making it the perfect accompaniment to prime rib with vine shoots. Finish with a blue cheese or dark chocolate cake.
