Grand Enclos du Château de Cérons
Graves White
The Grand Enclos du Château de Cérons Graves blanc is fortunate to be able to play on two "key" strengths: the ripeness and fatness of Semillon, and the freshness and fruitiness of Sauvignon Blanc.
ASSEMBLY:
Semillon, which expresses itself so well in poor soils, contributes its volume, fullness and smooth aromas of vine blossom, yellow apple, ripe melon, white peach and honey for 50-55%. Sauvignon, with its citrus (lemon, tangerine, yellow apple), white peach and apricot aromas, brings vivacity and freshness to 40-35%. The remaining 10% is sauvignon gris, with a strong perfume of pink grapefruit, to complete the alchemy.
VINIFICATION AND REFINEMENT:
40-60% of the Semillon is matured in new barrels, while the Sauvignon retains its delicate fragrance mostly in stainless-steel vats, from which it will only be released after a year or so. Enjoyable even when young, these are white wines that can be forgotten for several years in the cellar.
Cuisine:
Ideal with any meal, from fresh or cooked seafood to spicy fish or white meats, and topped off with mature sheep's or goat's cheese.
