Graves Red
The Grand Enclos du Château de Cérons Graves rouge claims to be a perfect expression of the Graves terroir. It's a racy wine with ripe fruit aromas lightly veiled by characteristic notes of smoke, graphite and cold ashes, reminiscent of the pine forests bordering the appellation to the west. Evocation of place or transmission of molecules?
ASSEMBLY:
Cabernet Sauvignon, blended for 40-50% depending on the year, brings a remarkable bouquet and, thanks to its structure, a great aptitude for ageing. The remaining Merlot adds fruitiness, racy charm and suppleness, creating a wine with a distinctive personality for each vintage.
VINIFICATION AND AGEING :
fermented in temperature-controlled stainless steel truncated-cone tanks with long vatting periods, it is aged in barrels of the finest Merrain oak, with 30-50% new wood, for 12-14 months.
Cuisine:
Ideal with flavorful red meats such as lamb, duck breast, game, as well as the classic prime rib cooked with vine shoots. Its spicy character is also perfect with Roquefort cheese.
